10-minute couscous salad

Description

This makes a great lunchbox filler for a day out and is equally good at home from the fridge

Ingredient

- 1 cup couscous

- 1 cup boiling water

- 1 tablespoon olive oil

- Salt and pepper

- 1/2 teaspoon dried oregano

- 1/2 teaspoon dried basil

- 1/2 teaspoon dried thyme

- 1/2 cup cherry tomatoes, halved

- 1/4 cup diced red onion

- 1/4 cup diced bell pepper

- 1/4 cup chopped cucumber

- 1/4 cup crumbled feta cheese

- 2 tablespoons chopped fresh parsley

Direction

Instructions:

1. In a large bowl, combine the couscous, olive oil, salt, pepper, oregano, basil, and thyme. Mix well to evenly coat the couscous with the oil and spices.

2. Pour the boiling water over the couscous and cover with a plate or lid. Let it sit for 5-7 minutes, or until all the water is absorbed.

3. Fluff the couscous with a fork and let it cool for a few minutes.

4. In the same bowl, add the cherry tomatoes, red onion, bell pepper, cucumber, feta cheese, and parsley. Mix well to combine.

5. Taste and adjust seasoning if needed.

6. Serve the couscous salad immediately or let it chill in the fridge for 15-20 minutes for the flavors to develop.
