Healthy, Quick, and Flavorful. This one pan lemon-garlic salmon and asparagus is ready in under 10 minutes and is packed with the delicious flavors of lemon-garlic and butter.
- 4 salmon fillets
- 1 bunch of asparagus
- 2 lemons
- 4 cloves of garlic
- Olive oil
- Salt
- Black pepper
- Dried oregano
- Dried thyme
1. Preheat the oven to 400°F (200°C).
2. Wash and trim the asparagus, then place them in a single layer on a baking sheet.
3. Drizzle with olive oil, season with salt and black pepper, and toss to coat evenly. Set aside.
4. In a small bowl, mix together 2 tablespoons of olive oil, the juice and zest of 1 lemon, minced garlic, and a pinch of salt and black pepper.
5. Place the salmon fillets on the prepared baking sheet, and brush the lemon garlic mixture evenly over the top of each fillet.
6. Cut the remaining lemon into slices, and place them on top of the salmon.
7. Sprinkle dried oregano and thyme on top of the salmon and asparagus.
8. Bake for 10 minutes, or until the salmon is cooked through and flakes easily with a fork.
9. Serve the lemon garlic salmon and asparagus hot, with a squeeze of lemon juice on top if desired. Enjoy!
