Description

Make the most of new season's asparagus and radishes in a vibrant salad with a French-style dressing. Great for a barbecue

Ingredient

- 1 cup mixed greens (such as spinach, arugula, lettuce)

- 1/4 cup cherry tomatoes, halved

- 1/4 cup cucumber, diced

- 1/4 cup bell pepper, diced

- 1/4 cup red onion, thinly sliced

- 1/4 cup crumbled feta cheese

- 2 tablespoons olive oil

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- Salt and pepper to taste

 

 

Direction

Instructions:
1. Begin by washing and drying 1 cup of mixed greens. You can use any combination of greens such as spinach, arugula, or lettuce.

2. In a large mixing bowl, add the mixed greens, 1/4 cup halved cherry tomatoes, 1/4 cup diced cucumber, 1/4 cup diced bell pepper, and 1/4 cup thinly sliced red onion.

3. In a small bowl, mix together 2 tablespoons of olive oil, 1 teaspoon of dried oregano, and 1 teaspoon of dried basil. Add a pinch of salt and pepper to taste.

4. Drizzle the dressing over the salad and toss everything together until well coated.

5. Sprinkle 1/4 cup of crumbled feta cheese on top of the salad.

6. Serve the salad immediately and enjoy your fresh, healthy allotment salad! You can also add grilled chicken or tofu for added protein.
