Artichoke & lemon dip

Good with breadsticks, or try this with grilled lamb or as a topping for crostini


- 1 can artichoke hearts

- 1 lemon

- 1/4 cup olive oil

- Salt

- Black pepper

- Dried parsley

- Garlic powder


1. Drain the can of artichoke hearts and chop them into small pieces.


2. Cut the lemon in half and squeeze the juice from one half into a small bowl.


3. Add the chopped artichoke hearts to the bowl with the lemon juice.


4. Drizzle the olive oil over the artichokes and lemon juice and mix well.


5. Season with a pinch of salt, black pepper, dried parsley, and garlic powder to taste. Mix everything together.


6. Transfer the artichoke mixture to a blender or food processor and blend until smooth and creamy.


7. If the dip is too thick, you can add a little more olive oil or lemon juice to thin it out.


8. Taste the dip and adjust the seasonings as needed.


9. Serve the artichoke and lemon dip with your favorite crackers, bread, or vegetables for dipping.
