- 1 cup quinoa
- 2 cups water
- 1 ripe avocado
- 1 bell pepper
- 1 cup cherry tomatoes
- 1/4 cup red onion
- Olive oil
- Salt
- Pepper
- Dried oregano
- Dried basil
- Dried thyme
1. Rinse 1 cup of quinoa in a fine-mesh strainer under cold water.
2. In a medium pot, bring 2 cups of water to a boil.
3. Add the rinsed quinoa to the boiling water and reduce the heat to low.
4. Cover the pot and let it simmer for 15-20 minutes until all the water is absorbed.
5. While the quinoa is cooking, chop 1 bell pepper, 1 ripe avocado, and 1/4 cup of red onion. Cut the cherry tomatoes in half.
6. In a small bowl, mix 1 tablespoon of olive oil, a pinch of salt, pepper, dried oregano, basil, and thyme.
7. Once the quinoa is cooked, turn off the heat and let it cool for 5 minutes.
8. In a large mixing bowl, add the cooked quinoa, chopped vegetables, and the olive oil seasoning mix.
