Bacon sandwiches with clementine ketchup

recipe Detail

A bacon sarnie for breakfast is one of life’s true joys – especially if you got a little too merry at a party the night before. Keep a batch of this incredible clementine ketchup on hand in the fridge – it knocks anything red or brown out of the park. If you’ve ever had a marmalade and bacon sandwich, you’ll know just how well citrus works in the mix; the combination of fruity sharp-sweetness and salty bacon is divine.

- 12 slices of bacon

- 6 slices of bread

- 2 clementines

- Olive oil

- Salt

- Pepper

1. Begin by preheating a large skillet over medium heat. While the skillet heats up, prepare the ingredients.

2. Cut the clementines in half and squeeze the juice into a small bowl.

3. Add a drizzle of olive oil to the bowl of clementine juice, along with a pinch of salt and pepper. Mix well to create the clementine ketchup.

4. Lay out the slices of bread on a flat surface. Spread the clementine ketchup on one side of each of the slices of bread.

5. Take 6 slices of bacon and place them on top of the clementine ketchup, making sure they are evenly spread out.

6. Place the remaining slices of bread on top of the bacon, with the clementine ketchup side facing down.

7. Drizzle a little bit of olive oil over the top of the sandwiches.

8. Carefully transfer the sandwiches to the preheated skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the bacon is crispy.

9. Once the sandwiches are cooked, remove them from the skillet and let them cool for a minute.

10. Cut each sandwich in half diagonally and serve hot. Enjoy your delicious and unique bacon sandwiches with clementine ketchup!
