Baked Eggs in Peppers

Description

The combination of the cheesy eggs and earthy peppers is perfect for any brunch!

Ingredient

- 2 bell peppers

- 4 eggs

- 2 tablespoons olive oil

- Salt

- Pepper

- Dried oregano

- Dried parsley

- Dried thyme

Direction

1. Preheat the oven to 375°F (190°C).

 

2. Cut the tops off the bell peppers and remove the seeds and membranes. Slice off the bottoms of the peppers if needed to make them stable when placed on a baking dish.

 

3. Brush the inside and outside of the peppers with olive oil and sprinkle with salt and pepper.

 

4. Crack an egg into each pepper, making sure not to overflow the pepper.

 

5. Sprinkle the eggs with dried oregano, parsley, and thyme.

 

6. Place the peppers on a baking dish and bake for 20-25 minutes, or until the eggs are cooked to your liking.

 

7. Once done, remove the peppers from the oven and let them cool for a few minutes.

 

8. Serve the baked eggs in peppers hot, garnished with additional dried herbs if desired.
