A rustic dish with a delicious combination of flavours and just four ingredients, try whipping it up for brunch
- 4 eggs
- 2 cups fresh spinach
- 1 large tomato, diced
- Olive oil
- Salt
- Pepper
- Dried oregano
- Dried basil
- Garlic powder
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a medium-sized skillet, heat 1 tablespoon of olive oil over medium heat.
3. Add the diced tomato to the skillet and cook for 2-3 minutes until it starts to soften.
4. Add the fresh spinach to the skillet and cook for an additional 2-3 minutes until it has wilted.
5. Season the tomato and spinach mixture with a pinch of salt, pepper, dried oregano, dried basil, and garlic powder. Mix well.
6. Grease a small baking dish with olive oil and transfer the seasoned tomato and spinach mixture into it.
7. Using a spoon, create 4 small wells in the mixture.
8. Crack an egg into each of the wells.
9. Place the baking dish in the preheated oven and bake for 12-15 minutes, until the eggs are cooked to your desired level of doneness. For a runny yolk, bake for 12 minutes, and for a firm yolk, bake for 15 minutes.
10. Once done, remove the baking dish from the oven and let it cool for a few minutes.
11. Serve the baked eggs with spinach and tomato hot, along with a side of toast or crusty bread, if desired.
