- 3-4 pound beef brisket
- Salt and pepper
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 cup beef broth
- 1/4 cup balsamic vinegar
1. Season the beef brisket generously with salt and pepper on both sides.
2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned beef brisket and sear for about 3-4 minutes on each side until browned.
3. Transfer the seared brisket to a slow cooker.
4. In the same skillet, add the chopped onion and minced garlic. Cook for a few minutes until they are soft and translucent.
5. Add the dried thyme, rosemary, oregano, and smoked paprika to the skillet with the onions and garlic. Stir and cook for another minute to release the flavors.
6. Pour the beef broth and balsamic vinegar into the skillet and stir to combine.
7. Pour the mixture over the beef brisket in the slow cooker.
8. Cover the slow cooker and cook on low for 8 hours or on high for 4 hours.
9. Once the brisket is cooked, remove it from the slow cooker and let it rest for 10 minutes before slicing it against the grain.
10. Serve the sliced brisket with the juices from the slow cooker drizzled over the top.
