Swapping milk for a quick stock and packing it with fresh herbs and zingy capers results in a pie that’s brighter yet just as comforting.
- 1 lb white fish fillets
- 1 lb potatoes
- 1 onion
- 1 carrot
- 1 cup frozen peas
- 1 cup milk
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
1. Preheat the oven to 375°F (190°C).
2. Peel and chop the potatoes into small chunks. Place them in a pot of boiling water and cook for 10-15 minutes, or until tender.
3. While the potatoes are cooking, dice the onion and carrot.
4. Heat olive oil in a pan over medium heat. Add the diced onion and carrot and cook for 5 minutes, or until softened.
5. Cut the fish fillets into small chunks and add them to the pan with the vegetables. Cook for 5 minutes, or until the fish is cooked through.
6. Pour in the milk and add the frozen peas. Bring to a simmer and let it cook for another 2-3 minutes.
7. Season the mixture with dried thyme, salt, and pepper to taste.
8. Drain the cooked potatoes and mash them with a potato masher or fork. Season with salt and pepper.
9. In a baking dish, spread the fish and vegetable mixture evenly on the bottom. Top with the mashed potatoes, spreading it evenly over the top.
10. Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and the filling is bubbling.
11. Serve hot and enjoy your delicious and easy-to-make fish pie! Optional: you can also sprinkle some dried parsley on top for extra flavor.
