1. Preheat your oven to 375°F (190°C).

2. Begin by preparing the biscuits. You can either use pre-made biscuits or make your own from scratch. If using pre-made biscuits, follow the instructions on the packaging. If making from scratch, here is a simple recipe:

- 2 cups all-purpose flour

- 1 tablespoon baking powder

- 1/2 teaspoon salt

- 1/4 cup cold butter, cut into small pieces

- 3/4 cup milk

In a large mixing bowl, combine the flour, baking powder, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually pour in the milk and mix until a soft dough forms. Roll out the dough on a floured surface and use a biscuit cutter to cut out circles. Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.

3. While the biscuits are baking, prepare the sausage gravy. In a large skillet, heat 2 tablespoons of olive oil over medium heat.

4. Add 1 pound of sausage to the skillet and break it up into small pieces using a spatula. Cook until the sausage is browned and fully cooked.

5. Sprinkle 2 tablespoons of flour over the sausage and stir to combine. This will help thicken the gravy.

6. Slowly pour in 2 cups of milk, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and let it cook for a few minutes until it thickens.

7. Season the gravy with salt, pepper, and a pinch of dried sage. Adjust the seasoning to your taste.

8. Once the biscuits are done baking, remove them from the oven and let them cool for a few minutes.
