One of the things I’ve learned about eating on a budget is that simple recipes win. The fewer ingredients you need, the fewer ingredients you need to buy, and that generally helps keep that grocery bill low (not to mention, it makes cooking easy). So, when I was planning for the first week of my September Challenge, my favorite dinner “cheat” recipe came to mind. Bowties and Broccoli, FTW.
- 8 oz bowtie pasta
- 1 head of broccoli, cut into small florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
1. In a pot of boiling salted water, cook the bowtie pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium-high heat.
3. Add the broccoli florets to the skillet and cook for about 3-4 minutes, until slightly softened.
4. Season the broccoli with salt, pepper, garlic powder, oregano, and basil. Stir to evenly coat the broccoli in the seasoning.
5. Add the cooked bowtie pasta to the skillet with the broccoli and stir to combine.
6. Cook for an additional 2-3 minutes, until the pasta is heated through and the flavors have melded together.
7. Taste and adjust seasoning as needed.
8. Serve hot as a side dish or as a main dish with some protein added, such as grilled chicken or shrimp.
