Breakfast Bell Peppers

Description

Bell peppers are fun because they act as a little bowl for your food, but then you can eat them too. For this recipe, you'll need some eggs, bacon, cheese, salt, pepper, and chives. Tip: If you keep the stem on the pepper, your ingredients will be less likely to spill out during cooking!

Ingredient

- 4 large bell peppers

- 4 eggs

- 1/4 cup chopped onion

- 1/4 cup chopped mushrooms

- 1/4 cup chopped tomatoes

- 1/4 cup chopped cooked bacon

- 1/4 cup shredded cheddar cheese

- 2 tablespoons olive oil

- 1/2 teaspoon garlic powder

- 1/2 teaspoon dried oregano

- Salt and pepper, to taste

Direction

1. Preheat your oven to 375°F (190°C).

 

2. Cut the tops off of the bell peppers and remove the seeds. Rinse and pat them dry.

 

3. In a pan, heat 1 tablespoon olive oil over medium heat. Add the chopped onion, mushrooms, and tomatoes. Cook until the vegetables are softened, about 5 minutes.

 

4. In a small bowl, beat the eggs and add in the cooked bacon and shredded cheese. Mix well.

 

5. Add the egg mixture to the pan with the vegetables and cook until the eggs are scrambled, about 3-4 minutes. Season with garlic powder, oregano, salt, and pepper.

 

6. Lightly brush the outside of the bell peppers with olive oil and place them in a baking dish.

 

7. Spoon the egg and vegetable mixture into the bell peppers, filling them to the top.

 

8. Bake in the preheated oven for 25-30 minutes, until the bell peppers are tender and the filling is set.

 

9. Optional: For a crispy top, broil the stuffed bell peppers for an additional 2-3 minutes.

 

10. Serve hot and enjoy your delicious and easy stuffed breakfast bell peppers!
