Description

These granola cups are the perfect meal prep breakfast! With a crunchy granola crust and a creamy yogurt filling, these cups are both delicious and filling.

Ingredient

- 2 cups rolled oats

- 1/4 cup honey

- 1/4 cup olive oil

- 1 tsp cinnamon

- 1/4 tsp nutmeg

- 1/4 tsp salt

 

Optional toppings:

- Greek yogurt

- Fresh berries

- Sliced almonds

Direction

1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with olive oil.

 

2. In a large mixing bowl, combine the rolled oats, honey, olive oil, cinnamon, nutmeg, and salt. Mix well until all the oats are coated in the honey mixture.

 

3. Divide the mixture evenly among the 12 muffin cups. Use your fingers to press the mixture into the bottom and up the sides of each cup, creating a cup shape.

 

4. Bake the granola cups for 10-12 minutes, until lightly golden brown and crispy.

 

5. Let the granola cups cool in the muffin tin for 5 minutes, then carefully remove them and place them on a wire rack to cool completely.

 

6. Once cool, you can fill the granola cups with your desired toppings. Some ideas include Greek yogurt, fresh berries, and sliced almonds.

 

7. Serve and enjoy your breakfast granola cups! They can be stored in an airtight container for up to 3 days. Enjoy as a quick and easy breakfast option.
