Brown sugar gives these sweet, baked treats a unique (and totally irresistible) flavor.
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1/2 cup rolled oats
- Olive oil for greasing
1. Preheat your oven to 350 degrees F (175 degrees C). Grease a baking sheet with olive oil and set aside.
2. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
3. Add in the egg and vanilla extract, and mix until well combined.
4. In a separate bowl, whisk together the flour, baking powder, cinnamon, salt, and nutmeg.
5. Slowly add the dry ingredients to the wet ingredients, mixing until a dough forms.
6. Fold in the rolled oats until evenly distributed.
7. Using a spoon or cookie scoop, drop dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
8. Use a fork to gently press down on each cookie to flatten them slightly.
9. Bake for 12-15 minutes, or until the edges are lightly golden.
