Description

This bruschetta chicken recipe is perfect for springtime entertaining. Grilled chicken is topped with a fresh tomato-basil salad for a main dish that’s both beautiful and delicious.

Ingredient

- 4 chicken breasts

- 2 cloves of garlic

- 1 red onion

- 2 tomatoes

- 1 baguette

- Olive oil

- Salt

- Pepper

- Dried oregano

- Dried basil

- 1/4 cup balsamic vinegar

Direction

1. Preheat your oven to 375°F (190°C).

 

2. Start by mincing the garlic cloves and thinly slicing the red onion. Cut the tomatoes into small chunks and set them aside.

 

3. Take the chicken breasts and season them generously with salt, pepper, dried oregano, and dried basil on both sides.

 

4. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Once the oil is hot, add the seasoned chicken breasts to the skillet and cook for 5 minutes on each side, until they are golden brown.

 

5. While the chicken is cooking, slice the baguette into 1-inch thick slices and place them on a baking sheet. Drizzle some olive oil over the slices and season with a pinch of salt and pepper.

 

6. Place the baking sheet in the oven and bake the bread slices for 5-7 minutes until they are crispy and golden brown.

 

7. Once the chicken is cooked, remove it from the skillet and set it aside on a plate. In the same skillet, add the minced garlic and sliced red onion. Cook for 2-3 minutes until they soften.

 

8. Add the chopped tomatoes to the skillet and stir them with the garlic and onion. Cook for an additional 2-3 minutes until the tomatoes are slightly softened.

 

9. Pour 1/4 cup of balsamic vinegar into the skillet and bring it to a simmer. Let it cook for 2-3 minutes until the sauce thickens slightly.

 

10. Add the cooked chicken breasts back to the skillet and coat them with the balsamic tomato sauce. Cook for an additional 2-3 minutes until the chicken is fully coated and the sauce has thickened.

 

11. Take the crispy baguette slices out of the oven and place them on a serving platter.

 

12. Top the bread slices with the bruschetta chicken and drizzle any remaining sauce over the top.

 

13. Serve hot and enjoy your delicious bruschetta chicken! You can also add some grated parmesan cheese or fresh herbs on top for added flavor.
