Description

Combine the sweet, earthy flavour of butternut squash with sausage, spinach, mushrooms and sage in this hearty pasta bake. It takes a little effort but it's well worth it

Ingredient

-1 butternut squash, peeled and diced

-4-5 sausages, sliced into rounds

-1 lb pasta of choice

-1 cup baby spinach

-8 oz mushrooms, sliced

-1/4 cup olive oil

-1 tsp garlic powder

-1 tsp onion powder

-1 tsp dried oregano

-1 tsp dried basil

-Salt and pepper to taste

-1 cup shredded cheese (mozzarella or cheddar)

Direction

Instructions:
1. Preheat your oven to 375°F (190°C).

2. In a large pot, bring water to a boil and cook the pasta according to package instructions. Drain and set aside.

3. In a separate pan, heat olive oil over medium heat. Add in the diced butternut squash and cook for 5-7 minutes until slightly tender. Remove from the pan and set aside.

4. In the same pan, add the sliced sausages and cook until browned and slightly crispy. Remove from the pan and set aside.

5. In the same pan, add the sliced mushrooms and cook for 5-7 minutes until softened. Add in the baby spinach and cook until wilted. Remove from the pan and set aside.

6. In a large mixing bowl, combine the cooked pasta, butternut squash, sausages, mushrooms, and spinach. Add in the garlic powder, onion powder, dried oregano, dried basil, salt, and pepper. Mix well to evenly distribute the seasonings.

7. Transfer the mixture into a greased baking dish. Top with shredded cheese.

8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
