Cheddar cheese and potato pie

recipe Detail

Description

Karen Burns-Booth shares her mother’s recipe for cheddar cheese and potato pie: comfort food at its best. Bake cheddary mustard mash until golden and serve with greens.

Ingredient

- 4 large potatoes

- 1 cup grated cheddar cheese

- Olive oil

- Salt

- Pepper

- Garlic powder

- Paprika

Direction

1. Preheat your oven to 375°F (190°C).

2. Peel and rinse 4 large potatoes, then dice them into small cubes.

3. In a large pot, bring water to a boil and add the diced potatoes. Boil for about 7-8 minutes until the potatoes are slightly tender, but still firm.

4. Drain the potatoes and let them cool for a few minutes.

5. In a bowl, mix the boiled potatoes with 1 tablespoon of olive oil, 1 teaspoon of salt, 1 teaspoon of pepper, 1 teaspoon of garlic powder, and 1 teaspoon of paprika. Toss until the potatoes are evenly coated with the seasoning.

6. In a greased 9-inch pie dish, spread half of the seasoned potatoes at the bottom.

7. Sprinkle half of the grated cheddar cheese on top of the potatoes.

8. Spread the remaining potatoes on top of the cheese, followed by the rest of the cheese.

9. Drizzle 1 tablespoon of olive oil on top of the cheese.

10. Cover the pie dish with foil and bake in the preheated oven for 20 minutes.

11. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and golden brown.

12. Let the pie cool for a few minutes before slicing and serving.

Enjoy your delicious cheddar cheese and potato pie! You can also add some chopped green onions or bacon bits on top for extra flavor. This pie can be served as a side dish or a main course with a side of salad.
