Description

This simple and satisfying meal tastes as good as it looks - and uses up any leftovers from your Christmas cheeseboard

Ingredient

- 1 package pasta (any shape)

- Olive oil

- Salt

- Pepper

- 1 onion, diced

- 2 cloves of garlic, minced

- 1 tsp dried oregano

- 1 tsp dried thyme

- 1 tsp dried basil

- 1 can diced tomatoes

- 1 cup shredded mozzarella cheese

- 1 cup shredded cheddar cheese

- 1/2 cup grated parmesan cheese

- Fresh herbs, for garnish (optional)

Direction

Instructions:

1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil and set aside.

2. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

3. In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.

4. Once the onions and garlic are soft, add in the dried oregano, thyme, and basil. Stir to combine and cook for an additional 1-2 minutes.

5. Pour in the can of diced tomatoes and bring to a simmer. Let the sauce cook for about 10 minutes, stirring occasionally.

6. In a large bowl, combine the cooked pasta and tomato sauce. Season with salt and pepper to taste.

7. Pour half of the pasta mixture into the prepared baking dish. Top with half of the shredded mozzarella and cheddar cheese.

8. Repeat the layers with the remaining pasta and cheese.

9. Sprinkle the grated parmesan cheese on top of the pasta bake.

10. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

11. Optional: Garnish with fresh herbs such as parsley or basil before serving.
