This creamy broccoli pasta is a speedy, satisfying and affordable meal which you can make in just 30 minutes. Use the grill instead of the oven to save time
- 1 lb penne pasta
- 1 head of broccoli, chopped
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
Instructions:
1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil.
2. Cook the penne pasta according to package instructions. Once cooked, drain and set aside.
3. In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
4. Add the chopped broccoli to the pan with the garlic and sauté for 5-7 minutes until tender. Season with salt, black pepper, dried oregano, dried basil, and dried thyme.
5. In a large mixing bowl, combine the cooked penne pasta and sautéed broccoli. Mix well.
6. Add 1 cup of shredded cheddar cheese and 1/4 cup of grated parmesan cheese to the pasta and broccoli mixture. Mix until the cheese is evenly distributed.
7. Transfer the pasta mixture to the greased baking dish. Top with 1/2 cup of shredded mozzarella cheese.
8. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and golden brown.
9. Let the cheesy broccoli pasta bake cool for 5 minutes before serving. Enjoy!
