This hearty and comforting casserole is made with tender rotisserie chicken, flaky biscuits, and a creamy sauce that's packed with flavor. It's the perfect one-dish meal for a cozy night in, or a great way to feed a crowd.
- 4 chicken breasts, cut into bite-sized pieces
- 1 can of refrigerated biscuits
- 1/4 cup olive oil
- Salt and pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 cup shredded cheddar cheese
1. Preheat your oven to 375 degrees F (190 degrees C).
2. Season the chicken breast pieces with salt, pepper, and all of the dried spices (garlic powder, onion powder, thyme, oregano, and paprika). Mix well until all pieces are evenly coated.
3. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breast pieces to the skillet and cook until they are lightly browned on all sides, about 5-7 minutes.
4. While the chicken is cooking, prepare the refrigerated biscuits according to the package instructions. Cut each biscuit into quarters and set aside.
5. Once the chicken is cooked, remove it from the skillet and set it aside. In the same skillet, add the biscuit quarters and cook for 2-3 minutes, or until lightly golden.
6. In a 9x13 inch baking dish, arrange the chicken pieces evenly on the bottom. Then, sprinkle the cooked biscuit quarters on top of the chicken.
7. Sprinkle shredded cheddar cheese on top of the chicken and biscuit mixture.
8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the biscuits are golden brown.
