This dish can be assembled ready for baking a good few hours ahead - and it's all cooked in one pan
- 1 lb chicken breast, cut into bite-sized pieces
- 1 head of broccoli, cut into small florets
- 1 lb pasta of your choice
- Olive oil
- Salt and pepper
- Garlic powder
- Italian seasoning
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a large pot, cook the pasta according to package instructions until it is al dente. Drain and set aside.
3. While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and garlic powder. Add them to the skillet and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
4. In the same skillet, add another tablespoon of olive oil and the broccoli florets. Season with salt, pepper, and Italian seasoning. Cook for about 3-4 minutes until the broccoli is slightly tender.
5. Combine the cooked pasta, chicken, and broccoli in a large baking dish. Pour in the chicken broth and mix everything together.
6. Sprinkle the shredded mozzarella cheese on top of the pasta mixture.
7. Cover the baking dish with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
