- 1 pound chicken breast, cut into small cubes
- 8 cups chicken broth
- 2 cloves garlic, minced
- 1 onion, diced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 cup egg noodles
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
1. Heat olive oil in a large pot over medium heat. Add onions and garlic and cook until onions are translucent, about 2-3 minutes.
2. Add chicken cubes and cook until browned on all sides, about 5 minutes.
