Ingredient

- 1 pound chicken breast, cubed

- 1 pound penne pasta

- 1 onion, chopped

- 1 red bell pepper, chopped

- 1 cup canned diced tomatoes

- 1 cup shredded mozzarella cheese

- 1 tbsp olive oil

- Salt and pepper, to taste

- 1 tsp dried oregano

- 1 tsp dried basil

- 1 tsp garlic powder

Direction

Instructions:

1. Preheat your oven to 375°F/190°C.

2. In a large pot of salted boiling water, cook the penne pasta according to package instructions until it is al dente. Drain and set aside.

3. In a large pan, heat the olive oil over medium-high heat. Add the chicken breast and cook for 5-6 minutes, or until it is fully cooked and slightly browned.

4. Add the chopped onion and red bell pepper to the pan with the chicken. Season with salt, pepper, dried oregano, dried basil, and garlic powder. Cook for an additional 2-3 minutes, until the vegetables are soft.

5. Add the canned diced tomatoes to the pan and stir everything together. Let it simmer for 5 minutes.

6. In a 9x13 inch baking dish, spread a layer of the cooked pasta on the bottom. Pour the chicken and vegetable mixture on top of the pasta. Sprinkle half of the shredded mozzarella cheese over the top.

7. Add another layer of pasta on top of the cheese, followed by the remaining mozzarella cheese.

8. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.

9. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and slightly golden.

10. Once done, remove from the oven and let it cool for a few minutes before serving. Enjoy your delicious and easy chicken pasta bake!
