- 1 lb chicken breast, cut into small cubes
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/4 cup water
- Cooked rice, for serving (optional)
1. In a large skillet, heat olive oil over medium-high heat. Add in chicken cubes and cook until they are no longer pink, about 5-7 minutes.
2. Remove the chicken from the skillet and set it aside on a plate.
3. In the same skillet, add in the sliced bell peppers, onion, and broccoli. Cook for 3-4 minutes until they are slightly tender.
