Description

Fried eggs on toast becomes a bit special with a few extra ingredients. A great dish for brunch, lunch or supper and it takes just 15 minutes to make

Ingredient

- 4 leeks, trimmed and thinly sliced

- 2 cloves of garlic, minced

- 1 red chilli, finely chopped

- Olive oil

- Salt and pepper

- Dried thyme

- 4 slices of bread

- 4 eggs

Direction

Instructions:

1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.

2. Add the sliced leeks to the skillet and cook for 5-7 minutes, stirring occasionally, until they start to soften.

3. Add the minced garlic and red chilli to the skillet with the leeks. Cook for an additional 2-3 minutes, until the garlic becomes fragrant.

4. Season the leeks with a pinch of salt, pepper, and dried thyme, to taste. Stir to combine.

5. In a separate skillet, heat 1 tablespoon of olive oil over medium heat.

6. Crack the eggs into the skillet and cook for 2-3 minutes until the whites are set but the yolks are still runny.

7. While the eggs are cooking, toast the slices of bread until golden brown.

8. Place the toasted bread on a plate and top each slice with a generous amount of the leek mixture.

9. Carefully place a fried egg on top of each slice of toast.

10. Serve the chilli & garlic leeks with eggs on toast immediately, garnishing with extra chilli flakes or fresh herbs if desired.
