Description

Serve up brunch with a bang - this pan-fried potato hash with Spanish sausage and earthy greens will start the day on the best possible foot

Ingredient

- 1 chorizo sausage, diced

- 2 cups kale, chopped

- 1 tablespoon olive oil

- Salt and pepper, to taste

- 1/2 teaspoon smoked paprika

- 1/4 teaspoon cumin

- 1/4 teaspoon garlic powder

- 1 egg

- Optional toppings: chopped cilantro, sliced avocado

Direction

Instructions:
1. In a large skillet, heat olive oil over medium-high heat.

2. Add the diced chorizo sausage to the skillet and cook until slightly browned, about 3-4 minutes.

3. Add the chopped kale to the skillet and stir to combine with the chorizo. Cook for an additional 2-3 minutes, until the kale is wilted.

4. Season the hash with salt, pepper, smoked paprika, cumin, and garlic powder. Stir to evenly coat the ingredients.

5. Push the hash mixture to the sides of the skillet and crack an egg into the center. Season the egg with a pinch of salt and pepper.

6. Cook the egg for about 3-4 minutes, or until the whites are set but the yolk is still runny.

7. Carefully transfer the hash and egg onto a plate and top with optional toppings such as chopped cilantro and sliced avocado.
