Cinnamon Roll Breakfast Muffins

Ingredient

- 2 cups all-purpose flour

- 1/4 cup granulated sugar

- 1 tbsp baking powder

- 1/2 tsp salt

- 1 tsp ground cinnamon

- 1/4 cup olive oil

- 1 cup milk

- 1 egg

- 1 tsp vanilla extract

- 1/4 cup butter, melted

- 1/4 cup brown sugar

- 1 tsp ground cinnamon

Direction

1. Preheat your oven to 375°F (190°C). Prepare a muffin tin by greasing it with some olive oil or lining it with muffin liners.

2. In a mixing bowl, combine the flour, granulated sugar, baking powder, salt, and 1 tsp of ground cinnamon. Mix well.

3. In a separate bowl, whisk together the olive oil, milk, egg, and vanilla extract.

4. Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix.

5. In a small bowl, mix together the melted butter, brown sugar, and 1 tsp of ground cinnamon.

6. Spoon about 1 tablespoon of the muffin batter into each muffin cup. Then, add a spoonful of the cinnamon sugar mixture on top.

7. Continue layering the muffin batter and cinnamon sugar mixture until all the batter is used up.

8. Bake the muffins for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.

9. Let the muffins cool in the tin for a few minutes before removing them and placing them on a wire rack
