Ingredient

- 6 medium-sized potatoes

- 1/4 cup chopped onion

- 1/4 cup chopped celery

- 1/4 cup chopped pickles

- 1/4 cup mayonnaise

- 2 tablespoons Dijon mustard

- 1 tablespoon apple cider vinegar

- 1 teaspoon sugar

- Salt and pepper to taste

Direction

Instructions:

1. Start by boiling the potatoes in a pot of salted water for about 15-20 minutes, or until fork-tender. Once cooked, remove from heat and let them cool.

2. While the potatoes are cooling, prepare the other ingredients by chopping the onion, celery, and pickles and set aside.

3. In a mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, sugar, and salt and pepper. Whisk well until the dressing is smooth and creamy.

4. Once the potatoes are cooled, peel off the skin and cut them into bite-sized cubes. Place them in a large mixing bowl.

5. Add the chopped onion, celery, and pickles to the potatoes and gently mix them together.

6. Pour the dressing over the potato mixture and toss until all the potatoes are coated in the dressing.

7. Taste and adjust the seasoning if needed.

8. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to develop.

9. Before serving, give the potato salad a final stir and add a drizzle of olive oil if desired. You can also sprinkle some dried herbs or spices for extra flavor.

10. Serve chilled and enjoy your classic potato salad! You can also garnish with some chopped fresh herbs for a pop of color.
