Copycat Chili’s Queso Dip

Skillet queso has never been this easy—or this good.


- 1 can diced tomatoes with green chilies

- 1/2 cup shredded cheddar cheese

- 1/2 cup shredded Monterey jack cheese

- 1 tablespoon olive oil

- 1 teaspoon cumin

- 1 teaspoon garlic powder

- Salt and pepper, to taste


1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat.

2. Add in the can of diced tomatoes with green chilies and cook for 2-3 minutes.

3. Add in 1 teaspoon of cumin and 1 teaspoon of garlic powder. Stir to combine and let cook for an additional 2 minutes.

4. Slowly add in the shredded cheddar and Monterey jack cheeses, stirring continuously until the cheese is melted and well combined.

5. If the dip is too thick, add in a few tablespoons of water to thin it out to your desired consistency.

6. Season with salt and pepper to taste.

7. Serve the queso dip hot with your favorite tortilla chips or vegetables for dipping.
