Description

Transform an egg mayo sandwich into something special with curry flavours, mango chutney and spring onions. Pack into a lunchbox and be the envy of your workmates

Ingredient

- 8 slices of bread

- 4 hard-boiled eggs

- 1/4 cup mayonnaise

- 1 tbsp olive oil

- 1 tsp curry powder

- 1 tsp dried coriander

- Salt and pepper to taste

Direction

Instructions:
1. Begin by boiling the eggs until they are hard-boiled. Peel the eggs and chop them into small pieces.

2. In a small bowl, mix together the chopped eggs, mayonnaise, olive oil, curry powder, dried coriander, and salt and pepper to taste. Stir until well combined.

3. Take two slices of bread and spread the egg mayo mixture evenly on one slice. Place the other slice on top to make a sandwich.

4. Repeat with the remaining bread and egg mayo mixture to make a total of 4 sandwiches.

5. Heat a large skillet over medium heat and lightly brush with olive oil.

6. Place the sandwiches in the skillet and cook for 2-3 minutes on each side, until the bread is golden brown and crispy.
