Courgette & tahini dip

Serve this thick, moreish dip of roasted courgettes and Greek yogurt with crudités or flatbread as part of a Lebanese meze spread


- 2 medium sized courgettes

- 1/4 cup tahini

- 1/4 cup olive oil

- Salt

- Black pepper

- Garlic powder

- Paprika


1. Wash and dry the courgettes, then slice them into thin rounds.


2. Heat a small amount of olive oil in a pan over medium heat. Add the courgette slices and sauté for 5-7 minutes, until they are soft and slightly browned.


3. In a food processor or blender, combine the cooked courgettes, tahini, olive oil, and a pinch of salt, black pepper, garlic powder, and paprika. Blend until well combined and smooth.


4. Taste the dip and adjust the seasoning to your liking. Add more salt, black pepper, garlic powder, or paprika as desired.


5. Transfer the dip to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of paprika.


6. Serve the courgette and tahini dip with your favorite vegetables, pita bread, or crackers for dipping. Enjoy
