Chef Mike Naidoo’s unashamedly luxurious crab toastie recipe elevates the classic crab sandwich to Christmas-party-with-bubbles-worthy heights.
- 8 slices of bread
- 1 can of crab meat
- 1/4 cup mayonnaise
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1 tsp dried dill
- 1 tsp dried parsley
- Salt and pepper
- 4 slices of cheddar cheese
- Butter
1. In a small bowl, mix together the crab meat, mayonnaise, olive oil, lemon juice, dried dill, dried parsley, and a pinch of salt and pepper. Set aside.
2. Heat a non-stick pan over medium heat.
3. Take one slice of bread and spread a thin layer of butter on one side. Place the bread, butter side down, onto the heated pan.
4. Add a slice of cheddar cheese on top of the bread and let it melt slightly.
5. Take another slice of bread and spread a generous amount of the crab mixture on one side. Place the bread, crab side down, on top of the cheese.
6. Let the bread toast for about 2-3 minutes, until it turns golden brown.
7. Carefully flip the toastie over and let it toast for another 2-3 minutes.
8. Once both sides are golden brown and crispy, remove the toastie from the pan and place it on a cutting board.
9. Repeat the process with the remaining bread slices and crab mixture.
10. Let the toasties cool for a minute before slicing them in half diagonally.
11. Serve hot and enjoy your delicious crab toasties! You can also sprinkle some extra dried dill and parsley on top for added flavor.
