Cranberry Salsa

Description

Tangy cranberry salsa, sweetened with a bit of sugar and spiced up with some minced jalapeño. It's quick and easy to make and always requested at gatherings. If not serving immediately, refrigerate and let come to room temperature when ready to serve.

Ingredient

- 1 cup fresh cranberries

- 1/4 cup chopped red onion

- 1 jalapeno pepper, seeded and chopped

- 1/4 cup chopped cilantro

- 1 tablespoon lime juice

- 1 tablespoon olive oil

- Salt and pepper to taste

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1 teaspoon chili powder

Direction

1. In a food processor, combine the cranberries, red onion, jalapeno pepper, cilantro, lime juice, olive oil, and seasonings.

2. Pulse until the ingredients are well combined, but still chunky.

3. Taste and adjust seasoning as desired.

4. Transfer the salsa to a bowl and let it sit in the fridge for at least 30 minutes to allow the flavors to meld together.

5. Serve the cranberry salsa with tortilla chips, on top of grilled chicken or fish, or as a condiment on a sandwich or wrap.

6. Enjoy and store any leftovers in an airtight container in the fridge for up to 3 days.
