These cream cheese banana bread muffins are both delicious and super easy for traveling! They're the perfect recipe to pack for those weekend road trips or beach days!
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup granulated sugar
- 1/4 cup olive oil
- 1 large ripe banana, mashed
- 1/4 cup cream cheese, softened
- 1 egg
- 1 tsp vanilla extract
- Olive oil or cooking spray, for greasing muffin tin
1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with olive oil or cooking spray.
2. In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In a separate mixing bowl, beat the sugar, olive oil, mashed banana, cream cheese, egg, and vanilla extract until well combined.
4. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
5. Scoop the batter into the greased muffin tin, filling each cup about 3/4 full.
6. Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
7. Let the muffins cool in the pan for 5 minutes, then remove them and place them on a wire rack to cool completely.
8. Optional: For added flavor and texture, you can sprinkle some extra cinnamon sugar on top of the muffins before baking.
