Ingredient

- Carrots

- Celery

- Bell peppers

- Cherry tomatoes

- Olive oil

- Salt

- Pepper

- Garlic powder

- Dried oregano

- Pistachios

- Greek yogurt

Direction

1. Begin by washing and peeling 2 carrots, 2 celery stalks, and 1 bell pepper. Cut the carrots and celery into sticks and slice the bell pepper into thin strips. Set them aside on a serving platter.

2. Rinse and dry a handful of cherry tomatoes, then add them to the platter alongside the other vegetables.

3. To make the creamy pistachio dip, start by finely chopping ¼ cup of shelled pistachios. You can use a food processor or a knife for this step.

4. In a small mixing bowl, combine the chopped pistachios with ½ cup of Greek yogurt, 1 tablespoon of olive oil, ½ teaspoon of garlic powder, ½ teaspoon of dried oregano, and a pinch of salt and pepper. Mix everything together until well combined.

5. Taste the dip and adjust the seasoning if needed, adding more salt, pepper, or garlic powder to your liking.

6. Serve the dip on the platter with the assorted vegetables, or transfer it to a separate bowl for dipping.
