A simple dip recipe that's low in fat and gluten-free. Refreshing mint and smooth ricotta make this a delectable veggie snack
- 1 cup frozen peas
- 1/4 cup fresh mint leaves
- 1/4 cup olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- Carrot sticks for serving
1. In a small pot, bring water to a boil and add frozen peas. Cook for 2-3 minutes until peas are tender.
2. Drain the peas and place them in a food processor along with fresh mint leaves.
3. Add olive oil, salt, black pepper, and garlic powder to the food processor.
4. Pulse until the mixture is well combined and smooth.
5. Taste the dip and adjust seasoning if needed.
6. Transfer the dip to a serving bowl and chill in the refrigerator for at least 30 minutes.
7. While the dip is chilling, wash and peel carrots. Cut them into sticks for dipping.
8. Once the dip has chilled, remove from the refrigerator and serve with carrot sticks.
