- 1 cup raw cashews
- 1 tbsp olive oil
- 1 tsp curry powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup water
1. Begin by soaking the cashews in water for at least 2 hours, or overnight for best results. This will soften the cashews and make for a smoother dip.
2. Drain the cashews and add them to a food processor or blender.
3. To the cashews, add the olive oil, curry powder, cumin, garlic powder, onion powder, salt, and black pepper.
4. Blend the mixture until it begins to form a paste, stopping to scrape down the sides of the blender or food processor as needed.
5. Slowly add in the water, a little at a time, and continue blending until the mixture reaches a smooth and creamy consistency. You may need to add more or less water depending on your desired consistency.
6. Once the dip is smooth and creamy, transfer it to a serving bowl.
7. Serve immediately with your choice of vegetables, crackers, or pita bread for dipping.
