- 1 tortilla or flatbread
- 2 eggs
- 1/4 cup shredded cheese
- 1/4 avocado, sliced
- 2 slices of deli ham
- Olive oil
- Seasoning (salt, pepper, garlic powder)
1. In a small bowl, beat the eggs and season with salt, pepper, and garlic powder.
2. Heat a non-stick pan over medium heat and add a drizzle of olive oil.
3. Pour the beaten eggs into the pan and cook, stirring occasionally, until fully scrambled.
4. Lay the tortilla or flatbread flat on a cutting board or plate.
5. Place the scrambled eggs in the center of the tortilla or flatbread.
6. Top the eggs with shredded cheese, avocado slices, and deli ham slices.
7. Roll up the tortilla or flatbread, tucking in the ends to create a sealed roll.
8. In the same pan, heat a bit more olive oil over medium heat.
9. Place the rolled-up tortilla or flatbread in the pan, seam side down.
10. Cook for 2-3 minutes on each side, until the tortilla or flatbread is lightly browned and crispy.
11. Remove from the pan and let it cool for a minute before slicing into rounds.
