Easy Butter Chicken

Description

This simplified version of the Indian classic combines chicken, tomato sauce, and a slew of aromatic spices all in one pot to make a flavorful dinner that’s just as good as the version you’ll get at restaurants — only way easier to make. Serve it over rice with a bit of cilantro to balance the heat and dinner is done.

Ingredient

- 1 lb chicken breast, cut into bite-sized pieces

- 1 onion, finely chopped

- 2 cloves of garlic, minced

- 1 can of diced tomatoes

- 1 cup of chicken broth

- 1/2 cup of heavy cream

- 2 tablespoons of butter

- 1 tablespoon of olive oil

- Salt and pepper, to taste

- 1 teaspoon of garam masala

- 1 teaspoon of cumin

- 1 teaspoon of coriander

- 1/2 teaspoon of paprika

- 1/4 teaspoon of cayenne pepper (optional)

- Fresh cilantro, chopped (optional)

 

 

Direction

1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook until they are golden brown on all sides. Remove the chicken from the skillet and set aside.

 

2. In the same skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onions and cook until they are soft and translucent, about 5 minutes.

 

3. Add the minced garlic and cook for an additional minute.

 

4. Add the garam masala, cumin, coriander, paprika, and cayenne pepper (if using) to the skillet. Stir to combine and cook for 1-2 minutes until fragrant.

 

5. Pour in the can of diced tomatoes and chicken broth. Bring to a simmer and let cook for 5 minutes.

 

6. Add the chicken back into the skillet and stir to coat it with the sauce. Let the chicken cook for an additional 5 minutes.

 

7. Pour in the heavy cream and stir well. Let the sauce cook for another 5 minutes to thicken.

 

8. Season with salt and pepper, to taste.

 

9. If you want a thicker sauce, you can use a potato masher to lightly mash some of the chicken and tomatoes.

 

10. Let the butter chicken cook for a final 5 minutes, stirring occasionally.

 

11. Serve the butter chicken over rice or with naan bread. Optional: sprinkle with fresh chopped cilantro before serving.
