Party food doesn't have to be fattening. Dip in to this fresh, healthy snack as many times as you like
- 1 cup frozen edamame beans
- 1 clove of garlic
- 1 small chili pepper
- 1 tablespoon olive oil
- Salt and pepper
- Assorted vegetables for dipping (carrots, celery, bell peppers, etc.)
1. In a small saucepan, bring water to a boil and add the frozen edamame beans. Cook for 3-4 minutes until tender. Drain and set aside to cool.
2. In a food processor, add the edamame beans, garlic clove, and chili pepper. Process until the beans are finely chopped.
3. Slowly drizzle in the olive oil while the food processor is still running. Continue processing until the mixture becomes smooth.
4. Taste the dip and add salt and pepper to your liking.
5. Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to develop.
6. While the dip is chilling, prepare the crudités by washing and cutting your selected vegetables into bite-sized pieces.
7. Once the dip is chilled, serve with the crudités and enjoy! This dip can also be stored in the refrigerator for up to 3 days.
