This delicious, simple supper is faster, healthier and cheaper than a takeaway - ready in a super-quick 20 minutes
- 2 cups cooked white rice
- 1 cup cooked prawns
- 2 eggs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried parsley
Instructions:
1. In a large pan, heat 2 tablespoons of olive oil over medium heat.
2. Add the cooked prawns to the pan and sauté for 2-3 minutes, until they are heated through.
3. Push the prawns to one side of the pan and crack the 2 eggs into the other side. Scramble the eggs until fully cooked.
4. Once the eggs are cooked, mix them with the prawns in the pan.
5. Add the cooked white rice to the pan and stir to combine with the prawns and eggs.
6. Season the mixture with 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 teaspoon of dried parsley. Mix well to evenly distribute the seasoning.
7. Continue cooking the fried rice for another 3-4 minutes, stirring occasionally, until the rice is heated through and slightly crispy.
8. Serve the egg fried rice with prawns hot and enjoy! You can also top it with additional seasoning or add in other vegetables or proteins if desired. Enjoy your simple and delicious meal!
