Description

Make your own takeaway favourite with this Chinese-style rice one pot flavoured with soy and chilli

Ingredient

- 1 cup of uncooked white rice

- 1 cup of frozen peas

- 1/2 cup of frozen prawns

- 2 eggs

- 2 tablespoons of olive oil

- Salt and pepper

- 1 teaspoon of garlic powder

- 1 teaspoon of onion powder

- 1 teaspoon of paprika

- 1 teaspoon of soy sauce (optional)

Direction

Instructions:

1. Cook the rice according to the package instructions and set aside.

2. In a small bowl, mix together the garlic powder, onion powder, paprika, and a pinch of salt and pepper.

3. In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add in the frozen peas and cook for 2-3 minutes until they are slightly softened.

4. Push the peas to one side of the skillet and add in the frozen prawns. Cook for 3-4 minutes, flipping occasionally, until they are pink and cooked through.

5. Push the prawns to the side with the peas and crack in the eggs on the other side of the skillet. Use a spatula to scramble the eggs and mix them with the peas and prawns.

6. Once the eggs are cooked, add in the cooked rice and the seasoning mixture. Use a spatula to mix everything together until the rice is evenly coated with the seasoning.

7. Drizzle in the remaining 1 tablespoon of olive oil and continue to stir-fry the rice for another 2-3 minutes until it is heated through and slightly crispy.

8. If desired, add in a teaspoon of soy sauce for some extra flavor and color.

9. Serve the egg fried rice with prawns and peas hot, garnished with some chopped green onions or cilantro. Enjoy!
