Description

Use tofu as a substitute for egg along with dairy-free mayo to make these vegan sandwiches. They're ideal for a kids' party where some children may have an intolerance or allergy

Ingredient

- Slices of bread (white, whole wheat, or your preferred type)

- Egg-less mayonnaise

- Olive oil

- Salt

- Black pepper

- Dried herbs (such as oregano or basil)

- Optional fillings (lettuce, tomato, cheese, etc.)

Direction

Instructions:
1. Begin by preheating a non-stick pan over medium heat. This will be used to toast the sandwiches.

2. Take two slices of bread and spread a generous amount of egg-less mayonnaise on one side of each slice. This will act as the binding agent for your sandwich.

3. If using any optional fillings, place them on one slice of the bread on top of the mayo. You can use lettuce, tomato, cheese, or any other vegetable you prefer.

4. Sprinkle a pinch of salt and black pepper on the filling to add some flavor.

5. Drizzle a small amount of olive oil on the other slice of bread, covering the entire surface.

6. Sprinkle some dried herbs (like oregano or basil) on the oiled bread slice.

7. Place the oiled bread slice on top of the other slice with the filling, making sure the oiled side is facing outwards.

8. Place the sandwich on the preheated pan and cook for 2-3 minutes on each side, until the bread is golden brown and crispy.

9. If desired, you can press down on the sandwich with a spatula to help the filling stick together.

10. Once both sides are evenly toasted and the filling is warmed through, remove the sandwich from the pan and let it cool for a minute.

11. Cut the sandwich diagonally into two triangles and serve hot.
