Perfect for BBQs and buffets, our epic salad is an assembly job of gorgeous ingredients – no cooking required. Serve it with lamb kebabs for an impressive summer feast

Ingredient

- 2 cups mixed greens

- 1 cup cherry tomatoes

- 1/2 red onion

- 1 avocado

- 1/2 cup sliced cucumbers

- 1/4 cup crumbled feta cheese

- 1/4 cup chopped fresh herbs (such as basil, parsley, or cilantro)

- 2 tablespoons olive oil

- 1 tablespoon lemon juice

- Salt and pepper to taste

- Optional: dried oregano, red pepper flakes

Direction

Instructions:
1. Begin by washing and drying the mixed greens, cherry tomatoes, and cucumber slices.

2. Cut the cherry tomatoes in half and thinly slice the red onion.

3. Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Chop into bite-sized pieces.

4. In a large bowl, combine the mixed greens, cherry tomatoes, red onion, avocado, and cucumber slices.

5. In a small bowl, whisk together the olive oil, lemon juice, and a pinch of salt and pepper. If desired, add a pinch of dried oregano and red pepper flakes for extra flavor.

6. Drizzle the dressing over the salad and toss to evenly coat.

7. Sprinkle the crumbled feta cheese and chopped herbs over the top of the salad.

8. Serve immediately and enjoy your delicious and refreshing epic summer salad!
