Fresh Pineapple Salsa

Description

This pineapple salsa with jalapeño, bell pepper, lime juice, and cilantro is perfect with fish or chicken!

Ingredient

 1 fresh pineapple

- 1 red bell pepper

- 1/2 red onion

- 1 jalapeño

- 1/4 cup cilantro

- 2 cloves of garlic

- 1 lime

- olive oil

- salt

- black pepper

- cumin

- paprika

Direction

1. Begin by preparing the pineapple. Cut off the top and bottom of the pineapple and then cut off the skin. Remove the core and dice the pineapple into small pieces.

 

2. Finely chop the red bell pepper, red onion, jalapeño, and cilantro. Mince the garlic cloves.

 

3. In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, cilantro, and minced garlic.

 

4. Squeeze the juice of one lime over the mixture and drizzle with a tablespoon of olive oil. Mix well to combine.

 

5. Season the salsa with salt, black pepper, cumin, and paprika according to your taste preferences. Mix everything together until well combined.

 

6. Cover the bowl with plastic wrap and let the salsa sit in the fridge for at least 30 minutes to allow the flavors to meld together.

 

7. Serve the fresh pineapple salsa as a topping for tacos, grilled chicken or fish, or enjoy it with tortilla chips as a dip.

 

8. Store any leftovers in an airtight container in the fridge for up to 3 days. Enjoy!
