Ingredient

- 8 oz golden noodles

- 4 cups vegetable broth

- 1 tablespoon olive oil

- 1 teaspoon salt

- 1 teaspoon black pepper

- 1 teaspoon garlic powder

- 1 teaspoon dried thyme

- 4 eggs

- 1 cup chopped mixed vegetables (carrots, celery, bell peppers, mushrooms)

- 1 green onion, thinly sliced

Direction

Instructions:
1. Start by preparing the soft-boiled eggs. Bring a pot of water to a boil and carefully add the eggs using a ladle or spoon. Let them cook for 6-7 minutes, then remove them from the water and place them in a bowl of cold water to stop the cooking process. Once cooled, peel the eggs and set them aside.

2. In a separate pot, heat the olive oil over medium heat. Add in the chopped vegetables and cook for 3-4 minutes until they start to soften.

3. Pour in the vegetable broth and bring to a boil. Add in the salt, black pepper, garlic powder, and dried thyme. Stir to combine.

4. Next, add in the golden noodles and let them cook for 8-10 minutes until they are soft and fully cooked.

5. Cut the soft-boiled eggs in half and add them to the soup. Let them cook for an additional 2-3 minutes until heated through.

6. Serve the soup hot, topped with thinly sliced green onions for an extra pop of flavor and color.
