I absolutely love tomatoes, any kind, any size. Being from the South, that includes fried green tomatoes. I created a special summer sandwich to show them off.
- 2 slices of bread
- 4 slices of bacon
- 1 green tomato
- Olive oil
- Salt and pepper
- Garlic powder
- Paprika
- 2-3 leaves of lettuce
- Mayonnaise
1. Start by preheating a pan over medium heat. While the pan is heating, wash and slice the green tomato into thin slices.
2. In a small bowl, mix together 1 tablespoon of olive oil, a pinch of salt, pepper, garlic powder, and paprika. This will be used as a seasoning for the tomato slices.
3. Add the bacon slices to the heated pan and cook until they are crispy. Remove the bacon from the pan and place it on a paper towel to drain excess oil.
4. In the same pan, add the seasoned tomato slices and cook for about 2-3 minutes on each side until they are slightly softened.
5. While the tomatoes are cooking, toast the slices of bread in a toaster or in a separate pan.
6. Once the bread is toasted, spread a thin layer of mayonnaise on one slice of bread.
7. Layer the cooked bacon on top of the mayonnaise, followed by the cooked tomato slices.
8. On the other slice of bread, add 2-3 leaves of lettuce.
9. Carefully place the lettuce side of the bread on top of the tomato side, creating a sandwich.
10. Cut the sandwich in half and serve immediately. Enjoy your delicious Green Tomato BLT Sandwich!
