Description

Serve this halloumi, carrot, orange and watercress salad with a mustard and honey dressing for an easy lunch or starter. It takes just 20 minutes to make and delivers one of your 5-a-day

Ingredient

- 1 block of halloumi cheese

- 3 large carrots

- 2 oranges

- Olive oil

- Salt

- Pepper

- Dried oregano

- Dried thyme

Direction

Directions:
1. Preheat a grill or grill pan to medium-high heat.

2. Slice the halloumi cheese into 1/4 inch thick slices.

3. Peel the carrots and use a vegetable peeler to create long, thin ribbons. Place the ribbons in a bowl.

4. Cut the oranges in half and squeeze the juice into the bowl with the carrots. Use a spoon to scoop out any remaining pulp and add it to the bowl.

5. Drizzle olive oil over the carrot and orange mixture and season with salt, pepper, dried oregano, and dried thyme. Toss to combine.

6. Place the halloumi slices on the grill and cook for 2-3 minutes on each side, until grill marks form and the cheese is slightly softened.

7. As the halloumi cooks, continue to toss the carrot and orange mixture to ensure the flavors are evenly distributed.

8. Remove the halloumi from the grill and let it cool for a minute before slicing it into bite-sized pieces.

9. Add the sliced halloumi to the carrot and orange mixture and toss to combine.

10. Serve the halloumi, carrot, and orange salad immediately, or chill in the fridge for a few hours to let the flavors marinate. Enjoy!
