Healthier Veggie Fried Rice

Ingredient

- 2 cups cooked brown rice

- 1 cup mixed vegetables (carrots, peas, corn, green beans)

- 2 tablespoons olive oil

- 2 cloves of garlic, minced

- 1 teaspoon ginger, grated

- 2 eggs, beaten

- Salt and pepper, to taste

- 1 tablespoon soy sauce

- 1 teaspoon sesame oil

- Green onions, chopped for garnish (optional)

Direction

1. In a large skillet or wok, heat the olive oil over medium-high heat.

 

2. Add in the minced garlic and grated ginger, and cook for 1-2 minutes until fragrant.

 

3. Add in the mixed vegetables and cook for 3-4 minutes until they start to soften.

 

4. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.

 

5. Combine the scrambled eggs with the vegetables and add in the cooked brown rice.

 

6. Season with salt and pepper, to taste.

 

7. Drizzle soy sauce and sesame oil over the rice and vegetables, and stir to combine all the ingredients together.

 

8. Cook for an additional 2-3 minutes, or until the rice is heated through.

 

9. Optional: garnish with chopped green onions for an extra pop of flavor and color.

 

10. Serve hot and enjoy your healthier veggie fried rice!
